Chocolate Chip Bacon Cookie

1/2 cup coconut flour
1/4 tapioca flour
4 tbsp. Butter, melted
1/2 cup maple syrup (or organic brown sugar)
4 eggs
2 tsp vanilla extract
1 tsp baking soda
1/2 cup dark chocolate chips
3 slices of bacon

Preheat oven to 360 degrees.

Place bacon on cookie sheet and bake until crispy. When done, allow to cool and chop or crumble into small pieces.

In a medium bowl mix dry ingredients (except bacon and chocolate chips) together and remove any clumps.

In a separate bowl whisk wet ingredients (except melted butter)

Pour wet ingredients into dry ingredients and mix well.

Pour in butter and mix well.

Fold in chocolate chips and bacon pieces.

Line cookie sheet with parchment paper and place table spoon size cookies on cookie sheet. Flatten slightly into approximately 2” discs.

Bake for 20 minutes and let cool. You can bake slightly longer for crispier cookies.
