Apple Pie Pancakes

This is our new favorite pancake recipe which is saying something since, as you know, we LOVE pancakes.

• 2 apples (your choice. I used Gala)
• 1/3 cup coconut flour
• 1/4 cup tapioca flour
• 4 eggs
• 1/2 tsp baking soda
• 1 tbsp lemon juice
• 2 Tbsp maple syrup, divided
• 1 Tbsp butter
• 2 tsp cinnamon, divided
• 2/3 cup coconut milk (or more to get desired consistency of batter or use a little water too)*
• pinch of salt

Slice apples into 1/4 inch slices and remove core from pieces. (slice across the core)

Set aside apple slices, 1 teaspoon cinnamon and 1 tablespoon maple syrup.

Mix together remainder of ingredients into pancakes batter.

Melt butter in large skillet over medium heat.

Place apple slices in pan. Fry for a few minutes until bottom side is soft then flip each slice.

Dust the pieces with about 1 teaspoon cinnamon and drizzle with about 1 tablespoon maple syrup.

Pour batter over apple slices so it just covers edges of the apples.

Cook until bottom of apple/pancake is lightly browned and flip.

Finish cooking until lightly browned on both side.

Dust with a little more cinnamon if desired and enjoy with butter and maple syrup.

* Since coconut milk varies in thickness and the amount of fat in each can it's difficult to give exact measurements.
