Maple Cinnamon Crunch

I don't know about you but we've got leftovers for days in our house. I'm really getting creative with things like turkey and brussels sprouts. On top of that we inevitably forget to put something out for our guests to enjoy. Does anyone else do that? Coconut Blueberry Crumb Muffins (grain free)

1 cup almond flour
1/4 cup coconut flour
2 eggs
1/3 cup shredded coconut
1 tsp. vanilla extract
1/2 cup Non-GMO brown sugar (or raw sugar or sweetener of choice)
1 cup blueberries
1/2 cup water
1/2 cup coconut milk
1/4 tsp baking soda

*Crumb Topping*
3 tbps. almond four
2 tbsp. shredded coconut
1 tbsp butter
1 tsp Non-GMO brown sugar
pinch of salt

Preheat oven to 350.

1/4 cup potato starch
1/3 cup brown sugar (use organic, non-gmo or use maple syrup or honey)
1 tsp. vanilla
1/4 tsp. sea salt
1/2 tsp. cinnamon
1/2 cup melted butter

1/2 cup coconut milk
