Yes, mayo is back!

If you’ve recently (or not so recently) adopted a paleo-type of diet or are just eating healthier by removing foods like soy, processed sugar and vegetable oils, then you likely have given up mayonnaise. Oh the humanity! Chicken and tuna salads have never been the same.

I freaking love me some mayonnaise. I’ve tried just using salt and olive oil. It doesn’t work. I’ve also tried a few different “paleo” mayo recipes and they all seem to miss the mark.

Grain-Free Coffee Crumb Cake

Sometimes you have tragedies in the kitchen: Your broth doesn’t gel up, you run out of coconut flour and it’s pancake Sunday, or you drop your last piece of bacon.

Sometimes your coffee maker malfunctions and you end up with an extra cup of coffee. Okay, not really a tragedy but that did happen earlier this week. I turned this minor mishap into a happy accident by developing this absolutely incredible recipe for grain-free coffee crumb cake.

Zucchini and Sausage Pie

So, for some reason we ended up with an extra dozen eggs from the farm a couple of weeks ago. The good news for you is that I had to get creative and came up with this amazing recipe. This Zucchini and Sausage Pie is perfect for any meal or a quick gran and go snack. It's supper easy to make too. Enjoy!

Apple Pie Pancakes

This is our new favorite pancake recipe which is saying something since, as you know, we LOVE pancakes.

• 2 apples (your choice. I used Gala)
• 1/3 cup coconut flour
• 1/4 cup tapioca flour
• 4 eggs
• 1/2 tsp baking soda
• 1 tbsp lemon juice
• 2 Tbsp maple syrup, divided
• 1 Tbsp butter
• 2 tsp cinnamon, divided
• 2/3 cup coconut milk (or more to get desired consistency of batter or use a little water too)*
