No Grain "Granola" Cereal

I'm always searching for something different for breakfast. I mean, not even I like to eat bacon everyday.

And while I always say, breakfast food doesn't have to look like "breakfast" food. There's nothing wrong with eating chicken or steak for breakfast.

Still, sometimes we just want something different or at least something that resembles a good ol' breakfast cereal. So, I came up with some grain-free "granola." Enjoy!

When I found out my buddy George Bryant from Civilized Caveman was writing a cookbook with Juli Bauer from PaleOMG I have to admit, I got a little giddy.

Apple Pie Pancakes

This is our new favorite pancake recipe which is saying something since, as you know, we LOVE pancakes.




• 2 apples (your choice. I used Gala)
• 1/3 cup coconut flour
• 1/4 cup tapioca flour
• 4 eggs
• 1/2 tsp baking soda
• 1 tbsp lemon juice
• 2 Tbsp maple syrup, divided
• 1 Tbsp butter
• 2 tsp cinnamon, divided
• 2/3 cup coconut milk (or more to get desired consistency of batter or use a little water too)*

Pumpkin Pancakes

1/2 cup pumpkin puree
4 eggs
1/3 cup coconut flour
1/4 tsp baking powder
1 tsp cinnamon

1/2 tsp nutmeg
1/4 tsp cloves
pinch of salt
1 tsp vanilla extract
2 tbsp maple syrup

Whisk together wet ingredients until well blended. Sift in coconut flour and spices and mix well.
