Chicken-Basil Mini Burgers with Plantain Fritters

Just came up with these little beauties and, for the love of all things pasture raised, they are amazing. 

Thought I'd share. The best part, other than the sensational flavor, is that from conception to eating was only about 25 minutes!

Ingredients:
1 lbs. pastured ground chicken
about 1 cup fresh chopped basil
1/2 finely chopped onion
salt and pepper to taste

Heat coconut oil in a large pan over medium heat. 
Mix ingredients in a medium bowl and form into small burgers. 
Fry until nicely browned on both side.

Plantain Fritters
Just take a ripe plantain (or 7, because they are so good you'll want to eat too many), cut it into about 2" pieces and boil them until soft.

Then crush the plantain pieces with a fork and form into pancakes. Salt to taste. Side Note: I know fritters are usually thicker than pancakes but I skipped lunch and was super "hangry" and wanted them done faster. 

Fry in coconut oil or bacon grease until browned on both side. 

If you want your dish to look awesome, layer the burgers and fritters with some fresh basil. If you don't care how it look then just shove those suckers in your mouth and enjoy. :)
