Gingerbread Man Cookies

3 cups of fine ground almond flour
1/4 cup tapioca starch
1/2 cup black strap molasses
1/4 cup of maple syrup
1 tbsp coconut milk
4 tbsp butter
2 cups of blanched almond flour
1/2 teaspoon baking soda
1/2 teaspoon ground ginger
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
pinch of sea salt
Preheat oven to 350'F
Melt butter in small saucepan over medium heat. Add the molasses, maple syrup and coconut milk. Remove from heat and set aside.
In medium mixing bowl mix dry ingredients.
Pour contents from sauce pan into mixing bowl, add egg and mix until well blended.
Place batter between two large pieces of parchment paper and roll out into a 1/4 inch sheet of dough.
Remove top layer of parchment, use cookie cutter to cut into shapes and place on parchment lined cookie sheet.
Bake for approximately 10 minutes. Allow to cool completely before decorating.

1/4 cup coconut milk
2 tbsp maple syrup
1/2 tsp vanilla
Whisk until well blended or use electric hand mixer. Store in fridge for 30 minutes before using.
