Overloaded Paleo Snack Bars

Makes 16 bars.

Ingredients

  •   1 c almond flour

  •   1 c shredded coconut

  •   3eggs

  •   1⁄4 c sliced almonds

  •   1⁄2 c dried cranberries

  •   1⁄2 c dark chocolate chips

  •   1⁄2 c chopped walnuts

  •   1⁄4 c diced dates

  •   3 T maple syrup

  •   1 tsp. vanilla

Directions

  1. Preheat oven to 350°F.

  2. Mix all ingredients in a large bowl until well blended.

  3. Spread batter onto parchment lined baking sheet making it about 1⁄2 inch thick.

  4. Bake for 30 minutes or until bottom is golden brown.
