Pumpkin Banana Chocolate Chip Muffins (Plus a Pumpkin Recipe Round Up)

Halloween may be over but as far as I'm concerned, it's still pumpkin season.

Enjoy these amazing grain-free muffins. You can thank me later. :)

1/2 cup almond flour
1/4 cup coconut flour
1/2 cup pumpkin puree
1 ripe banana
2 tbsp coconut oil or butter, melted
1/3 cup maple syrup
1 tsp vanilla extract
3 eggs
1 tsp pumpkin spice or about:
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp all spice
1/4 tsp ginger
1/2 tsp baking soda
pinch of salt
3/4 cup mini dark chocolate chips, divided

Preheat over to 350 degrees

Mix dry ingredients together and remove any clumps.

In a medium bowl, whisk eggs and other wet ingredients. Then add dry ingredients and mix well.

Fold in half the chocolate chips.

Grease or line muffin tin and fill each cup to about 3/4 full.

Use remaining chips to cover top of each muffin.

Bake for approximately 30 minutes.

I’d say let cool before enjoying but we both know that’s not going to happen.
