Pumpkin Spice Cookies (egg free, grain free, dairy free)

1 cup pumpkin puree
2/3 cup salted almond butter
3 tbsp fresh ground flax meal
3 tbsp coconut flour
1/2 cup organic (non-GMO) brown sugar, packed (or 1/2 cup coconut sugar with 2 tbsp molasses)
1/ 2 tsp baking soda
1 tsp vanilla
1 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp ginger
pinch sea salt
Preheat oven to 350 degrees.
Combine all ingredients in a medium bowl and mix very well.
Scoop dough into golf-ball size onto greased cookie sheet. Press with a fork to flatten.
Bake for 15 - 16 minutes or until bottom of cookies are medium brown.
Allow to cool (if you can wait) and enjoy!
