Chicken Apple Bacon Hash

Ingredients

3-4 Free-range chicken thighs (or chicken breasts, whatever floats your boat)

1 Large organic apple

4 Slices pasture raised bacon

Salt and Pepper

Prep

This is about as easy as it gets. If you have some chicken leftover from last night’s dinner, it’s even easier.

Start by cutting up your bacon into about 1 inch pieces. Then chop up the chicken. Finally, dice up your apple.

Butternut Sqaush-Parsnip Soup [with bacon]

• 1 medium butternut squash, peeled and diced
• 4-5 medium parsnips, cleaned and diced
• 1 medium onion, roughly chopped
• 1/2 pound of bacon, cooked and diced into “bacon bits”
• Water and/or bone broth, enough to just cover squash and parsnips in large pot (about 4-5 cups)
• 3 cloves garlic
• 2 apples, diced
• 2 tsp. ginger
• 1 tsp. cardamom
• 1 tsp. paprika
• 1/2 tsp. cayenne pepper (optional and to taste)
• 1/2 cup coconut milk
• 3 tbsp. butter

Maple Cinnamon Crunch

I don't know about you but we've got leftovers for days in our house. I'm really getting creative with things like turkey and brussels sprouts.
